Ingredients

  • 1 whole chicken 3 pounds
  • 1 cup carrots cut in large pieces
  • 1 cup celery cut in large pieces
  • 2 cloves garlic
  • 1 onion medium
  • 1 lemon sliced
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 cup chicken stock
  • 1 tsp sea salt
  • 1 tsp papaya pepper
  • 2 tbsp olive oil

Instructions

  • Preheat oven at 400 degrees.
  • Pat chicken dry and place in baking dish or roasting pan.
  • Stuff chicken with carrot and celery pieces, onion, garlic, lemon slices, Rosemary and thyme sprigs.
  • Put any left-over ingredients in the baking dish around the chicken.
  • Coat the chicken with the olive oil then add salt and papaya pepper.
  • Cover chicken with foil and bake for 30 minutes.
  • After 30 minutes, remove the foil and bake for another 30 minutes or until the internal temperature reads 165 degrees.
