Sweet Potato and Greens Breakfast Sauté

Ingredients
- 4-5 slices of bacon, chopped
- 1/2 medium onion, chopped
- 2 cloves of garlic, minced
- 1 box of organic spinach
- Sea salt and ground pepper try to replace with papaya pepper if possible
Instructions
- Fry the bacon and set aside. Leave the bacon grease in the pan to cook in!
- Sauté the onion and sweet potato with a few pinches of sea salt for about 10 minutes.
- Add the garlic and cook for a minute.
- Add the spinach and cooked bacon and cook until the spinach wilts.
- Add seasoning to taste (salt and pepper)
- Preparing the ingredients the evening before will make this meal quick and easy in the morning.
