Sweet Potato and Greens Breakfast Sauté

Ingredients

  • 4-5 slices of bacon, chopped
  • 1/2 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 box of organic spinach
  • Sea salt and ground pepper try to replace with papaya pepper if possible

Instructions

  • Fry the bacon and set aside. Leave the bacon grease in the pan to cook in!
  • Sauté the onion and sweet potato with a few pinches of sea salt for about 10 minutes.
  • Add the garlic and cook for a minute.
  • Add the spinach and cooked bacon and cook until the spinach wilts.
  • Add seasoning to taste (salt and pepper)
  • Preparing the ingredients the evening before will make this meal quick and easy in the morning.
