  • 1 egg yolk
  • 1 tbsp Dijon mustard
  • 1 cup olive oil or avocado oil
  • 1 tbsp vinegar or lemon juice
  • 1 pinch of salt


  • Mix egg, mustard and salt in a bowl.
  • Blend for 15 seconds on lowest speed.
  • Without stopping the machine, add the oil in a trickle.
  • Finish with the addition of lemon juice or vinegar.
